Vegetable Pulao

Ingredients

Half cup basmati rice 1 medium sized onion, finely chopped 1 small tomato, finely chopped One-fourth cup green peas 3 tablespoon finely chopped French beans One fourth cup finely chopped carrot 1 small piece bay leaf Cinnamon, 2 cloves Basic masalas 2 tablespoon finely chopped coriander leaves

Cooking Instructions

1. Wash rice soak it in water for 10-15 minutes. Drain and keep it aside. 2. Heat ghee and oil together in pressure cooker. Add cinnamon, clove, bay leaf and saute it for a minute till fragrant. Put on onions and stir it till it becomes golden brown. Add salt taste-wise. 3. Now add chopped beans, carrot, tomatoes and green peas. Stir them for about 2 minutes. 4. Add soaked rice, garam masala, red chilli powder, turmeric powder and salt. Stir it for approx 2 minutes. Add one cup of water then mix it well. 5. Close the lid and cook on medium flame for at least 2 whistles and turn off the flame. 6. Let it cool at room temperature and serve it by garnishing it with coriander leaves.
